The flexible blade bends in a controlled way along the contour of the bone when filleting fish – giving maximum yield and minimal waste. Ergoforge's forged blade adds strength and precision without compromising on flexibility.
The Ergoforge series from Sanelli consists of hand-forged knives made in one piece – from the blade to the core of the handle – for superior balance and durability. The blade is hardened to 54–56 HRC for long-lasting sharpness. The ergonomic POM handle with stainless steel rivets gives a stable, comfortable grip. Made in Italy and dishwasher safe.
